A while back we posted this No Bake Matcha Tea Cake Recipe. I'll be honest, it wasn't exactly healthy so we decided to find this Low Carb No Bake Matcha Cheese Cake Recipe.
This recipe only has 2g grams of carbs which means you are allowed this Matcha Cheese Cake on any low carb diet plan.
Please note that the below quantities are for 12 servings.
YOU'LL NEED:
For the Filling
- 3 tablespoons of Good Quality Matcha Tea Powder. Grab some here with free shipping.
- 250ml of Heavy Whipping Cream.
- 2 and 1/2 cups of Cream Cheese.
- 3/4 cups of natural sweetener. We recommend Stevia.
- 2 teaspoons of Vanilla Essense
For the Crust
- 1/2 Teaspoon Vanilla Extract.
- 1/2 Cup of Nut Flour.
- 2 tablespoons of unsalted butter.
- 1/4 teaspoon of salt.

Step 01. Mix all Crust Ingredients together
Put 1/2 a cup of ground nuts into a large mixing bowl. Insert 1/4 teaspoon of salt into the ground nuts and mix.
Mix 1/2 teaspoon of vanilla essence into 2 teaspoons of melted butter. Add this mixture into the ground nuts mix and mix thoroughly with a spoon.
Step 02. Microwave Crust Mixture for 30 to 45 Seconds
Place mixture in the microwave for 30 to 45 seconds. Remove every 15 seconds and mix to make sure it heats evenly.
*Warning; The crust burns easily in the microwave but do not worry if it turns slightly brown.
Step 03. Add Mixture to Plastic Covered Cake Tray
Add the Matcha Cheesecake crust mixture to a cake tray that has been layed over with plastic wrap.
Once that crust has been added, flatten the mixture with a fork. Place in the freezer while you prepare the low carb Matcha Cheese Cake mixture.
Step 04. Make the Matcha Cheese Cake Filling
Add 3 tablespoons of Matcha Powder into a large mixing bowl.
Then whisk in the following ingredients in order:
- 3/4 cups of Stevia
- 1/2 cup of heavy cream.
- 2 teaspoons of Vanilla essence.
- The other 1/2 cup of heavy cream. Mix until smooth.
- 2 and 1/2 cups of warmed cream cheese. Whisk cream cheese alone before adding it to the mixture above.
Your mixture should look something like this...
Step 05. Add Filling into Crust
Add the filling into the cake tin on top of the crust. Flatten mixture with a large spatula.
You can also slight tap and jiggle the cake tin to allow the mix to further settle into the crust.
Step 06. Chill for 4 hours and Serve
Place the Matcha Cheese into the refrigerator NOT FREEZER for 4 hours. Once chilled, sprinkle Matcha Powder over the Matcha Cheese Cake to enhance the taste.
Step 07. Serve and ENJOY!
